One of the things that I really value is a recipe that requires very little equipment, particularly after a long day at school or the office. I can't tell you how many times I have taken on a recipe that looked simple but ended up requiring a million pots, pans and bowls. A quick cleanup can make a delicious meal that much better. That's why this One Pan Egg Scramble has been my go to dish lately.
This is a creation of my own and it is totally customizable. You can add anything you want to the pan! Kale and edamame have been working for me lately but throw whatever you have lying around in. Just think about what you like in a omelette (onions, peppers, spinach) because after-all, this is basically a deconstructed omelette.
All you do is cook your veggies and/or meat first and then crack some eggs in the pan and stir it up. It takes about 5 minutes, seriously. You could leave the eggs intact but I prefer to mix everything together and then top with cheese...yum! You could also serve it with some breakfast sausage and toast on the side if you want a hardier meal or serve as is for a quick and lite meal.
