Thanksgiving's over and hopefully you all stuffed yourselves. But now i'm back at school and that means back to cooking for myself. So I went to the store today and stocked up on ingredients. Here's the plan: black beans and rice.

Basically, seven ingredients. And as usual, I made a few changes. But just a few, I promise!
First, I made brown rice to go with the beans. The recipe didn't call for rice but I figured it was a way to make it a little more hearty and last a bit longer. I prepared the rice according to the directions on the bag.
Second, I didn't use kielbasa but rather a chicken sausage. I'm not a big red meat eater so I usually substitute turkey or chicken when recipes call for beef or pork. In this case, I went with a slightly spicy chicken sausage which I thought added a lot to the flavor. Up to you.
