Finals are in full swing and that means less time for cooking...or maybe more if you're a procrastinator like myself.
I went grocery shopping earlier this weekend and tried out a different store, one with a focus on local ingredients. I was surprised to find this was my cheapest shopping trip yet, about $32! I'll have to see if I can continue this trend.

As for this weeks staple dish, i'll be enjoying a chicken and white bean chili. My mom has made a variation of this several times for my family and I've loved it. It's a great spin on chili.
But with it being finals week and the last week of the semester, it's time to get rid of leftover ingredients meaning I strayed from the recipe a bit and packed in a few more veggies.

I used this recipe as the base for my dish, but added kale (1 bunch, shredded), carrots (about 1 cup, chopped) and celery (3-4 stalks, chopped), which I cooked at the same time as the onion. I also used chicken tenders rather than thighs and low fat milk in place of heavy cream.
As for what I didn't add, because i'm always missing something, I didn't add cumin, aniseed or red pepper flakes. I did miss the spice that the red pepper flakes typically add, but if you're not a fan of spicy, leaving the flakes out is the way to go. The dish was still flavorful though and had lots of different textures, which I enjoyed. With plenty of leftovers, I will be fueled for finals week and my long drive home.

Tip: To make the chili a bit thicker, use a spoon to squash some of the beans against the side of the pot. It's an easy way to add some thickness without having to use heavy cream.
