Spring seems to finally have sprung (at least for now) and this week I felt inspired to bring in a summer staple. I started making this recipe a few years ago and it is truly one of the easiest meals i've ever made. You just throw everything in a boiling pot of water and you've got yourself a giant platter of goodness in 30 mins or less. I'm happy to introduce the southern boil.
Also known as a low country boil, this is a great warm weather dish to feed a crowd, or in my case, feed me for the week. Corn, potatoes, sausage and shrimp are the ingredients in this dish. That's it.
I first boiled the potatoes (which are all the way at the bottom, that's why you can't see them) for about 15-20 mins. Than I added the frozen shrimp and allowed to cook for about 8 minutes. The shrimp I used was already peeled and deveined for an extra time cut. Then I cooked the corn for 3-5 minutes and finally the chicken sausage for just a minute or so because it was already cooked and just needed heating. Dump the water out and you're all set. You could also add old bay seasoning to the water for an extra kick of flavor or serve with hot sauce like I did.
You could also serve with a side of corn bread or a side salad. Seriously, give this a try!
**Note: when you add a new ingredient to the water, you will lower the temperature. Frozen shrimp in particular will really drop the temperature. This could change the cook time so just keep this in mind with the ingredients you use.
