What a week. 4 exams in 4 days. It's been rough, but I still managed to make some delicious dishes this week. Proof that eating well doesn't necessarily have to take a lot of time. Take a look at what was on this weeks menu.

I love alfredo sauce but, unfortunately, it tends to be pretty horrible nutrition wise. The cream-based sauce is usually loaded with fat and calories, despite it being so delicious. When I found this recipe, I was eager to give it a go.
Well if it's alfredo-less, what's the sauce you ask?
Cauliflower. By blending up cooked cauliflower with some chicken broth, milk and seasoning, you get a thick and creamy sauce that has the texture of alfredo and no, not exactly the same flavor, but delicious in it's own right for way fewer calories. Served over mushrooms and whole wheat penne, this dish was rich and satisfying and made plenty of leftovers (i'm still working my way through them!)

2. Turkey Chili
Such an easy recipe. Everything basically goes into one pot and cooks for as long or as short a time as you want. Longer will build the flavor, but if you're short for time, just cooking everything through is good enough!

I adapted the recipe from one I found on Allrecipes.com. The only thing I did differently was I bought a pack a chili seasoning. Much cheaper than having to buy individual seasonings and it packed just as much flavor.

*** When choosing beans, canned tomatoes and seasonings, watch out for sodium. The canned items, particularly tomatoes, can be really high in sodium content, so keep an eye out. No one needs to be getting 60% of their daily sodium intake from a can of tomatoes.
