I'm pretty sure we all had that phase when we were kids where we had a very limited diet. For years, my diet consisted of cheeseburgers, fries and pizza. Although I do still love those, my parents did a wonderful job of expanding my horizons. But every now and then all you want is something classic and who could forget chicken tenders?!
For this week's staple, that's just what I made: a huge batch of chicken tenders. Quick and easy to whip up, perfect to take on the go and delicious, here is what you'll need:
INGREDIENTS:
-Cooking spray
-1 packet of chicken breast tenders
-1 cup bread crumbs, whole wheat
-1/2 cup flour, whole wheat
-2 eggs or egg substitute
-Salt and pepper, to taste

INSTRUCTIONS:
- Preheat oven to 425. Spray a baking sheet with cooking spray.
- Place flour and bread crumbs into two separate bowls. Add salt and pepper to the flour.
- Whisk two eggs together in another bowl.
- Working one tender at a time, dip chicken into flour, egg, and then bread crumbs. Line the tenders up on the baking sheet.
- Bake for 20-25 minutes until golden brown. Serve with a side salad.
