Sometimes I look in my fridge and have to take a step back because I can't believe how many ingredients I have to get through, particularly vegetables. Squash, a half eaten bag of spinach, a bunch of garlic, half an onion and cheese that expires in a day. Maybe you experience the same thing?
Even though I try to be very good about buying just what I need, I somehow always end up with some leftover food. And I HATE throwing out perfectly good food! So this week I wanted to tackle my growing pile. Hello Enchilada Casserole!

This dish looks good, tastes great and can feed a crowd or leave you with a bunch of leftovers.
INGREDIENTS:
-Cooking spray
-1 cup butternut or acorn squash, cubed
-1 medium onion, sliced
-1 green bell pepper, sliced
-1 cup spinach
-1 cup turkey or chicken sausage, pre-cooked and sliced
-1 jar salsa
-Whole wheat tortillas
-Shredded cheddar cheese
-Salt and pepper

-1 cup butternut or acorn squash, cubed

-1 green bell pepper, sliced
-1 cup spinach
-1 cup turkey or chicken sausage, pre-cooked and sliced
-1 jar salsa
-Whole wheat tortillas
-Shredded cheddar cheese
-Salt and pepper
DIRECTIONS:
- Preheat oven to 425 and grease a 9x9 baking dish.
- Place cubed squash and slice onion and pepper in dish and drizzle with olive oil. Season with salt and pepper and bake for 35-40 minutes until vegetables are tender.
- Remove from oven and lower temperature to 350.
- Place vegetables in a large bowl and mix with 1/2 jar of salsa. Set aside.
- In same baking dish, spoon a layer of salsa on the bottom. Now place a layer of tortillas and top with vegetable mix, sliced sausage, a handful of spinach and a sprinkle of cheese. Add another layer of tortillas, salsa, vegetables, sausage, spinach and cheese. To finish, add a final tortilla layer and sprinkle with cheese.
- Bake for 15-20 minutes until cheese is melted and browned slightly.
- Serve as is or with salsa, sour cream and guacamole.
