Kale, as I mentioned before, can be quite bitter. I have often found it hard to eat kale without cooking it first. NOT any more! I am pleased to report that thanks to a new recipe, I am eating raw kale happily and whole heartedly.
This salad is creamy, tangy and just plain delicious. It's loaded with vitamins, fiber and healthy fats and works great as a side or as a lite lunch.
KALE & AVACADO SALAD (serves~4)
1 bag of kale
1 avocado, cut in half, pit removed and flesh scooped out
1 green pepper, diced
1 small red onion, diced
1 lemon, juiced
white wine vinegar, 2-3 tablespoons (or to taste)
olive oil, 1-2 tablespoons
salt and pepper
Combine all the ingredients in a bowl and then get your hands in there! Seriously, wash your hands and then massage the kale. You want to smash the avocado so that it's covering the kale. That's how you get the creaminess that is so delicious. Enjoy.
