This week I was really craving pasta! It's been a while since I've done anything with pasta so I figured it was time and when I think of my favorite pasta dish it's probably Fettucine Alfredo. Unfortunately, my favorite is probably one of worst pasta dishes in terms of nutrition. But there are always options people!!
This week's creation: Coconut Milk Alfredo with Chicken and Veggies. Now I know this sounds weird, but don't knock it till you try it folks. Coconut milk makes this dish super creamy and satisfying without all the cream and cheese. In fact, there is no cheese in the dish at all!

INGREDIENTS:
DIRECTIONS:
- Olive oil
- 3 chicken breasts, sliced into 1/4 inch cubes
- 2 cans coconut milk, unsweetened
- 2 cups chicken broth
- 3/4 box whole wheat angel hair pasta
- 1 red bell pepper, large dice
- 1 large carrot, dice
- 1 onion, dice
- 1 cup broccoli, bite size pieces
- Salt and pepper, to taste
DIRECTIONS:
- Heat 1 tbsp olive oil in a large pot over medium-high heat. Add the cubed chicken breasts and season with salt and pepper. Cook for 5-10 minutes until no longer pink. Remove from pan and set aside.
- Heat 1 tbsp of oil in same pan. Add onion, cooking for 1-2 minutes until fragrant. Add carrots, broccoli and bell pepper and season with salt and pepper. Cook for 5-6 minutes until veggies begin to soften.
- With heat still on, add the coconut milk and chicken broth to the vegetables. Stirring occasionally, allow broth to come to a simmer.
- Add the spaghetti to the mixture. You can break the spaghetti in half if it makes it easier to fit. Use tongs to mix the spaghetti into the broth and vegetables. Allow to cook for about 8-10 minutes, continuing to stir occasionally. You want the spaghetti to be cooked and the sauce to thicken and reduce slightly.
- Before serving, add the chicken and allow to cook for another 2-3 minutes until heated through.
- Serve and enjoy!
