Although I can't necessarily say "paella" correctly, I think I make it pretty well. I found the recipe for this dish in Clean Eating magazine and was drawn in by how simple it seemed. Typically when I think I paella, I imagine something that has to sit for a while and thicken...I could be totally wrong. But this recipe promised me a chicken and shrimp filled paella in 20 minutes. And it didn't let me down.
I was also drawn to this dish because it is packed with wonderful things: lean chicken breast, plenty of vegetables, and quinoa! Quinoa is another great grain that I love cooking with. It's loaded with fiber and is actually pretty high in protein. For those of you who get stumped on the pronunciation (grandma...) try saying KEEN-wah. Now I did make a few alterations and additions to this recipe. For starters, I didn't have paprika or cumin so I left them out. I didn't miss them. As for additions, I added a large handful of spinach as well as some hot sauce. Who doesn't love more veggies and a kick of spice right? Other than that, I stuck to the recipe and thoroughly enjoyed every bite.
