Who can resist cheesy, doughy pizza? I certainly can't, so when I found a recipe for pizza in a magazine I decided to add a variation of it to this weeks menu.
I debated whether or not to make my own pizza dough, but decided to go with store bought dough to save time and probably money. I have found extremely simple pizza dough recipes online before though, including whole grain ones that I plan to make next time... I have no doubt there will be a next time.
The dough I bought was ready to bake so I rolled it out and then spread a thin layer of olive oil on top, added chopped garlic and cheese (a mix of low-fat mozzarella and cheddar) and then topped it with fresh spinach. The spinach wilted beautifully and with just a few ingredients, I had an extremely flavorful pizza and plenty of leftovers. What's great about pizza dough is you can truly top it with anything, so have fun! I of course encourage you to choose whole wheat/grain doughs :)
