I often have the tendency to think that for a meal to be successful it needs to be elaborate. But sometimes, it's important to remember that even the simplest of dishes can be a hit. And this week, i'm stepping away from the casseroles, the chilis and the stews and focusing on simplicity.

Add some salt and pepper and maybe a squeeze of lemon juice and cook in the oven for 20-25 minutes at 350 degrees. Yum.

Grab some veggies that you like, maybe asparagus or carrots, and pop them in boiling water until they are soft. Season with salt, pepper and olive oil and you're good to go. I chose a mix of broccoli and cauliflower and of course sweet potatoes. The potatoes take about 40 minutes to boil, so keep that in mind if you choose the potato route.

Don't be afraid to accept a helping hand from the grocery store...sometimes. I chose this salad mix of shredded kale, brussel sprouts, cabbage and carrots that did NOT have any dressing. This way I controlled the type and amount of dressing I used. So if you do choose to purchase ready-made items from the store, just make sure you know what's actually in them. There are often unnecessary ingredients that you could avoid.
