Spring break is over and it's back to the grind. This week, I'm pulling out a new kitchen gadget: the spiralizer. Maybe you've heard of this nifty tool, if not, go ahead and google it now. I'll wait.
Currently my spiralized vegetable of choice is zucchini. They are super easy to spiralize and I love serving them up in place of wheat noodles. Not to mention, zucchini's are packed with vitamins and antioxidants.

I like to spiralize 1-2 zucchinis and then toss the "noodles" in a pan with olive oil until they are soft. Then I add some plain old, store bought pasta sauce (watch out for added sugar and sodium) and heat. I also added some boiled broccoli, cauliflower and carrots that i'm working my way through this week. Serve alone or add a side of meatballs or, in my case, chicken sausage. Tada! A delicious, lighter take on a spaghetti dinner.
Note: if using a spiralizer, be sure to cut the ends of the vegetable you are working with flat. This will make them much easier to spiralize.
