The crock-pot gets a lot of hype and I never really understood why. I enjoy cooking so I never found it appealing to just throw things into a pot and let it sit all day long. But boy was I wrong. Enter, crock-pot Fajitas.
This dish is truly easy and great for when you're busy. Throw chopped vegetables, chicken breasts and seasoning into the crock pot, walk away and three hours later you're ready to eat. That's it. Think of all the things you can do in three hours!

And this dish is definitely on the healthier side, packed with antioxidant and Vitamin C filled peppers and lean, protein rich chicken. To make it even better, use whole grain tortillas. And this dish is a great way to feed several people. My roommates and I all ate this for dinner and still have leftovers.
