Very proud to share a recipe that I actually came up with myself. Yeah, it may not be super fancy but it's always fun to see what I can come up with on my own. My inspiration for this dish? Needing to use ingredients before they go bad. So I grabbed two zucchinis, 1 cup of frozen brussel sprouts, 1/2 an onion, a handful of kale and some tomato sauce and got to work. The result was super yummy and it took me very little time.
Here's what to do:
- Spiralize the zucchinis and set aside.
- In a pan, heat 1 tbsp. olive oil and add the brussel sprouts and chopped onion. Cook until the onion is tender and the brussel sprouts are starting to brown.
- Add the zucchini and kale and toss, cooking until the noodles are soft and the kale has started to wilt slightly, 2-3 minutes.
- Add the tomato sauce and toss.
- You can serve it up just the way it is or for an added bonus, place the pasta mix into a small baking dish and top with some cheese. I used fat free mozzarella and broiled the dish in the oven for about 2 minutes, just until the cheese was melted. It was absolutely delicious and none of my groceries went to waste.
